Ingredients: Anchovies from the Cantabrico Sea, extra virgin olive oil and salt.
The finest Anchovies are from Cantabria, in the Bay of Biscay, the world capital of anchovies. Only the best and freshest raw materials are chosen. Boats owned and operated, are set out to fish during peak season in April-June when the quality is best and contains higher fat content. The catch returns within hours to begin processing.
Don Bocarte has established expertise in maturing anchovies in salt for at least 8 months by monitoring humidity and temperature until it achieves the perfect flavour and texture. The salting tradition dates back to the end of the 19th century, when thousands of Sicilians settled in the Santoňa villa. Attracted by the richness of these fishing grounds, they revolutionized the industry with their knowledge of preservation.
In the final steps, the craftsmanship of filleting and deboning is done by skilled hands revealing flawlessly clean and delicate filets. To finish, a special coupage from Masía El Altet is poured. This extra virgin olive oil brings fruity aromas, complementing the harmonious umami flavours of these exceptional anchovies.
