A5 JAPANESE WAGYU BEEF CUTS

Limited quantities of A5 Wagyu off-cuts are available and ideal for Japanese Saikoro or Yakiniku, handmade wagyu burgers, etc. These cuts have the same level of marbling, quality, texture and excellent flavour as full steaks.

Off-cuts are from Wagyu striploin/ribeye ends and not fully even in size, weight or shape. Thinner pieces may be cut into strips, while thicker sections can be cubed or trimmed into smaller steaks. The number of pieces will vary.

A5 JAPANESE WAGYU BEEF FAT

Fat from Wagyu beef is the most prized feature. Unlike any other animal fat, it is high in omega, amino and oleic acids. These fat trimmings can create juicy burgers or as an oil or butter substitute. Pure fat can also be used to make beef tallow.

Beef tallow is a Chef’s secret of rendered beef fat. It has a high smoke point and similar to duck fat (but better), it will boost flavour in your cooking. Try it in eggs, fried rice, potatoes and even searing other steaks or proteins.
