The Petit Gris snails are raised on a diet of wild foraged greens like dandelion, burdock, clover, sorrel, and others. Two weeks prior to processing, they’re finished on a diet of herbs like mint, basil, dandelion and tarragon. Those herbs become prominent nuances in the snail’s ultimate flavor profile. Sustainably farmed and available fresh (not frozen or cooked)

Snail caviar have a beautiful pearly white color and a firm membrane with a burst of rich, fatty, and briny essence that coats the tongue. Herbaceous, earthy and vegetal. Also known as Pearls of Aphrodite. Widely used in fine European cuisine.

The only USDA certified sustainable snail farm in North America to produce fresh snails. Most escargot in the market come from abroad, canned or frozen. These fresh snails are very versatile and have a great herbaceous and roasted mushroom like flavours. Ready to be poached with aromatics of your choice. All snails have been purged and cleaned.
