Season: Northern Hemisphere (Spain), roughly end of November to March. Southern Hemisphere (Australia), June to late August/early September.
Intoxicating robust aroma of cognac, cocoa and sweet earth, with hints of diesel. Dark brown to black flesh at maturity. Contrasting white veins throughout. The flavour develops when used in warm dishes.

Season:October to end of year.
The most prized and valued of all truffles! Aroma so pungent and garlick-y with hints of cheese and earth, that its undeniably intoxicating. Knobby with a smooth exterior and firm flesh that is from cream to chestnut colour with white marbling. Enjoy this white truffle purely raw atop simple dishes and complements wonderfully with butter. Cooking it will lose more aroma.
• Summer Truffles
Names:Black Summer Truffle, Trufa de Verano, Scorzone.
Species:Tuber Aestivum
Season: Late spring to late summer.
Coarse exterior and ivory to pale brown interior with intricate veins. Delicate hazelnut and woodsy aromas. Mild and fresh flavour. Best used in light dishes and shaved very thinly. Less expensive than the cousin Perigord truffle - so you can shave more!
• Burgundy Truffles
Names:Black Burgundy Truffle, Truffe de Bourgogne, Tartufo Nero di Fragno or Scorzone.
Species:Tuber Uncinatum
Season: September - November
Coarse exterior and dark brown interior with intricate tan veins. Fragrant, woodsy and deep hazelnut aromas. A cousin of the Summer Truffle.
